5 dates (dried and pitted) (~1 ¼ oz)
½ cups applesauce (unsweetened) (~4 ½ oz)
1 ½ oz coconut flour
2 tsp protein powder (~¼ oz)
2 ½ tbsp coconut (shredded) (~½ oz)
optional: 1 lemon (~2 oz)
optional: ½ tsp vanilla extract
optional: a tiny bit of salt
Place dates, applesauce, lemon juice, lemon zest and vanilla in a food processor. Process until pureed and mixture is combined.
Add coconut flour, protein powder and salt. Process until mixture forms a smooth ball of “dough.” (If mixture looks too dry, add 1-2 tsp water or almond milk).
Roll into balls. Place shredded coconut in a small bowl and roll balls in coconut.
Eat right away or store in an airtight container in the refrigerator.
